I've never ran across any of those types of applications in my 4 years of owning a Smart phone, so, frankly, I don't know if they exist - in fact, I doubt their existence.

But, a couple of searches brought up these quite interesting results:

FTP Clients:

CEdit seems to be the best editor for mobile devices.

PocketPutty looks like a great SSH client too, and this Mochasoft client should work on most all Windows Mobile devices (as the former requires WM Pro (Pocket PC).
